Emerald green tea, or cui ming in Chinese, is referred to as the most important stone in Chinese culture, jade, and especially emerald jade, cui yu. This tea is produced in Puer County of Yunnan Province, and the production of Emerald Green involves careful processing to preserve the freshness and natural flavor of the tea leaves. After harvesting, the leaves are usually withered, fixed (shaqing in Chinese, to halt oxidation), rolled, and dried. This process helps to retain the tea's green color and delicate flavor.
